During the last two BayRails events, Silicon Valley Lines’ John Plocher has made delicious slow cooked beef sandwiches which have been devoured by our guests and membership.
Recently, John shared the recipe for these delicious sandwiches:
Ingredients
- 2 pounds beef stew meat or tri-tip or cubed pork, trimmed of fat
- 2 cups chopped onions
- 2 cups chopped green bell pepper (optional)
- 3-4 cloves minced or chopped garlic
- 2 cups sliced mushrooms (optional)
- 1/2 cup brown sugar, firmly packed
- 2 teaspoons salt
- 1/2 cup yellow mustard
- 1/2 cup catsup
- 1 tablespoon chili powder (or to taste)
- 1/4 cup vinegar
- 2 teaspoons Worcestershire sauce
- 1 can (14-16 oz) chopped tomatoes with liquid
- 12 to 16 split sandwich buns
- Coleslaw or potato salad
NOTE: everything is “to taste”— Feel free to add/subtract and change, the recipe is extremely forgiving :-)
Interesting additions: cubed butternut squash, jalapenos. Apricot jam or orange marmalade works well if cooking with pork.
Preparation:
Sauté onions, garlic and green peppers with 1-2 Tbsp vegetable oil until nicely caramelized.
Combine all ingredients, except buns, in the slow cooker/Crock Pot.
Cover and cook on low for 8 to 10 hours, or until meat is very tender.
Remove meat; pull apart with a couple of forks to break meat pieces up; return to pot. Stir in mushrooms and continue to cook 1/2 to 1 hour more.
Serve on buns with coleslaw or salad.
Serves from 12 to 16.
